Its structure is mainly composed of water (about 85%), accompanied by a precious balance of nutrients:

  • Proteins (4.5%): containing essential amino acids.

  • Lipids (about 2%): rich in unsaturated fatty acids, useful for controlling cholesterol.

  • Fiber (8%): mainly composed of mycosin.

  • Microelements: minimal soluble carbohydrates, B and PP vitamins, and a rich mix of mineral salts (including potassium, phosphorus, iron and magnesium)

What makes the truffle magic is its unmistakable aroma. Among the volatile substances that compose its scent, a particular musky-scented alcohol stands out. This molecule is detected by a specific area of our sense of smell (the vomeronasal region), capable of directly stimulating the brain's limbic system, the seat of our emotions. It is precisely this biological mechanism that gives the truffle its renowned reputation as a natural aphrodisiac, capable of reawakening desire and romantic passion in both men and women.

Curiously, it is the exact same substance that in the past guided the infallible sense of smell of sows when hunting for truffles in the woods.
