The term truffle is the commonly used name for a particular type of hypogeal fungus, that is, a mushroom that completes its entire life cycle and matures underground. Scientifically speaking, it belongs to the Tuber genus, part of the Tuberaceae family (class Ascomycetes).
The birth and development of this precious gift of nature depends on a special connection with the surrounding environment. Growing in the soil, truffles develop under and alongside the roots of specific tree species, with a particular preference for oaks and holm oaks.
With these plants, it establishes a profound symbiotic relationship, known in botany as mycorrhiza. It is precisely thanks to this vital and reciprocal exchange with the roots of the host tree that truffles are able to produce their highly prized and sought-after fruiting bodies.
